  1. My friends took me to Costa Vida out at the new mall a couple weeks ago. It was delicious. I’m not sure if that is a chain or not. The meat was really good (and I don’t even LIKE meat!) and they had a lot of unusual flavors and combinations. My only complaint is that nothing is very spicy… but I’m sure some people will LOVE that!

  2. Costa Vida Fresh Mexican Grill is a chain restaurant. They use ocean themes in their restaurants. Ironically their first restaurant opened far from the sand and surf in Layton, Utah.

    I have been to the location at the Promenade Shops at Centerra (the new mall east of Loveland, Colorado). Costa Vida has the feel of Chipotle or Q’Doba, except with a California surf and sunshine theme (as I mentioned before). They appear to be American-owned and so far have not sold out to a large chain, as both Chipotle and Q’Doba have.

    I had the fish tacos at Costa Vida and didn’t care for them, but I’m glad to hear you had a nice experience.
